One of the things that ‘Kyle and I are trying this week is to see if we can make real Ethiopian injira. It’s a rolled up bread that is used as both a utensil and as a meal component. It’s made out of the grain teff which is indigenous to Ethiopia and surroundings. It’s got some cool advantages like it’s gluten-free… It’s got some major disadvantages is that it’s seems pretty hard to cook with. On Monday… Or was it Sunday?… We put some of the teff in a bowl with warm water and added baking east… In another bowl we tried the more traditional way which is to use natural yeast in the air.… Fade forward a couple of days and this blue green mass is what we have on the natural version.… Believe it or not the recipe says that’s the way it supposed to look like. Will have to see how it tastes
… Just as a note. I went all of January without drinking alcohol which was just a fun thing to do. I was trying to lose a little weight (I did… About 3 pounds which is what I was aiming for)… But I decided to also try giving up alcohol. It wasn’t hard to do… Though I did miss the ritual of having that one glass of wine. Surprisingly though I found that I was sleeping better without drinking late at night. I’ve never been a big drinker but a Brandy at night are we seem to help me get to sleep… But it didn’t keep me asleep. I slept so much better by not drinking at night. Very interesting experiment… That said the month is over and I had my first glass of wine… It was earlier in the evening so I don’t think it will interfere with my sleep… Let’s see
