Thursday night – slow snow

Greetings from Vermont… I’m not actually supposed to be here right now. I was heading to Minneapolis to see my mom but my flight got canceled along with about 5000 other flights in the neck last couple of days. It’s OK. My Trip got moved out to Sunday… Which will be fine. The ironic thing is despite dire warnings have a huge snowstorm… I woke up this morning to rain… But then it’s sprinkled snow all day. When I came out of work at about 730 tonight I expected to see a huge amount of snow. I have less than an inch on my car

I did just go spend some time working in the shop and I walked out and I noticed a couple more inches and fallen so perhaps we will get a nice dumping. I really hope so. I love the snow

Wednesday night – teff luck

Earlier in the week I reported on the experiment to try to create real Ethiopian injira bread from the grain teff. ‘Kyle and I had put it in to soak I believe on Sunday… As I reported a couple of days ago it turned kind of blue green but we were reassured by the recipe that it was supposed to look like that. Anyway we made a pretty yummy Ethiopian meal with Goma kale spiced with Ethiopian bererie And a spicy red lentil dish. Those came out perfectly but unfortunately our experiments with making imjira Had only mixed success. The batch that we made using baking yeast came out slightly better… We were able to actually pull it off the pan and roll it up. It had a good sour taste. But it didn’t have the nice budging is that the real restaurant style injira had . The version that we made using natural yeast… The one with the blue green mold on it… While it tasted fine it really didn’t hold up in the pan very well. Anyway we got enough of the rolled up bread that we actually had a pretty good and convincing meal. We’re gonna try it again when Diane gets back… This time we’re going to try to add a little bit of wheat flour to the Dough

Tuesday night (Delayed) – Mold on top

One of the things that ‘Kyle and I are trying this week is to see if we can make real Ethiopian injira. It’s a rolled up bread that is used as both a utensil and as a meal component. It’s made out of the grain teff which is indigenous to Ethiopia and surroundings. It’s got some cool advantages like it’s gluten-free… It’s got some major disadvantages is that it’s seems pretty hard to cook with. On Monday… Or was it Sunday?… We put some of the teff in a bowl with warm water and added baking east… In another bowl we tried the more traditional way which is to use natural yeast in the air.… Fade forward a couple of days and this blue green mass is what we have on the natural version.… Believe it or not the recipe says that’s the way it supposed to look like. Will have to see how it tastes

… Just as a note. I went all of January without drinking alcohol which was just a fun thing to do. I was trying to lose a little weight (I did… About 3 pounds which is what I was aiming for)… But I decided to also try giving up alcohol. It wasn’t hard to do… Though I did miss the ritual of having that one glass of wine. Surprisingly though I found that I was sleeping better without drinking late at night. I’ve never been a big drinker but a Brandy at night are we seem to help me get to sleep… But it didn’t keep me asleep. I slept so much better by not drinking at night. Very interesting experiment… That said the month is over and I had my first glass of wine… It was earlier in the evening so I don’t think it will interfere with my sleep… Let’s see
